Reshma Suresh
Reshma Suresh is a Dual PhD Research Scholar in Food Science and Nutrition at Kerala Agricultural University, India, and Western Sydney University, Australia. Her research interests focus on the therapeutic potential of foods, prebiotics, gut health, functional foods, and bioactive compounds. Her current doctoral research explores the nutritional, medicinal, and functional properties of dragon fruit (Hylocereus spp.), including its bioactive composition, antioxidant and prebiotic potential, and the development and quality evaluation of value-added food products. Her work aims to explore the health-promoting potential of dragon fruit and its by-products and translate these findings into innovative and nutritionally beneficial food applications.
